I’ve really been trying to add more vegetables into my diet. I know it’s not been a very popular idea with my boys (hubby included) but I really want to be healthier and spend less money at the same time. This means making more myself instead of relying on the microwave and finding new ways to make vegetables taste delicious. Don’t get me wrong, I like vegetables. I love salads. But it does get old after awhile and I also like variety. Today I’m sharing one of my favorite go to meals that incorporates two veggies and can be made Whole 30 compliant!
Ingredients: 1 Sweet Potato, 2-3 Slices of Ham, One Slice Provolone Cheese, Salt and Pepper
Broccoi, Olive Oil, Garlic Powder, Salt and Pepper
Let’s start with the main dish.
Start with a cooked sweet potato and split in half. Dice up the ham and provolone cheese. Pop in the microwave for 30 second and add salt and pepper to taste. Cracked pepper always tastes better in my opinion.
As for the broccoli, I swear by this recipe from A Spicy Perspective. The recipe is called “perfect roasted broccoli” and it is, indeed, perfect! It comes out amazing every time. If you like making kale chips, this is even better. The recipe calls for a 15 minute baking time but I like to do 20 minutes to make it a bit crispier.
That’s it! It’s delicious, packed with nutrients, and easy to make. I did the math on the calories through Fooducate (one of my favorite apps that you can read about HERE) and the whole meal added up to about 360 calories. Enjoy!
